Peachy Oatmeal Cookie Bars

These oatmeal cookie bars don’t include refined sugar and are made of natural and gluten-free ingredients. They’re great for a breakfast or a snack when you need some extra oatmeal energy On The Go!

  • 2 dl oatmeal flakes
  • 1 dl rice milk
  • 1 egg
  • 3 dried peaches or dates chopped in pieces
  • 2 tbs crushed peach or unsweetened marmalade
  • 0,5 dl coconut virgin oil
  • 1 tbs Agave syrup
  • 1/4 ts salt
  • 1 ts cinnamon
  • 1 ts vanilla
  • 1 dl crushed almond

Mix all dry ingredients together. Mix all liquid ingredients together and combine them with the dry ones. Bake in 200 c  oven about 15 min.  Cut into snack bar size and wrap in paper or folio to have it To Go! I think next time I’ll try this with chocolate chips…
