I am in love with beetroot. It’s sweet, it makes pink food and is full of health benefits for you. It’s one of the best detox foods and it known for being an excellent source of folic acid, manganese and potassium, as well as fibre.
One of my favourite foods is hummus which you can include in pretty much any meal, or that you can eat as a healthy snack. So I decided to try how it turns out of beetroot.
Beetroot hummus is a lighter option to the traditional one, and brings a nice variation to the table with it’s color and taste. The recipe is easy!
Beetroot hummus (gf, mf)
450 g beetroot (cooked)
2 table spoons tahini
2 table spoons olive oil
1 garlic clove
1 lemon’s juice
0,5 tea spoon cumin
1 ts Himalayan salt
To prepare it just put all ingredients in a mixer and let it run until the mix is smooth. Let it set in the fridge and serve with nachos for example!
